You may be rusty on your needle turn but your stitching is great. The secret to circles is freezer paper. Cut out your circles in freezer paper, iron it onto the fabric and trim around, fold over the edge, tack your circle all the way around and iron. Then stitch it to the background, removing the paper when you have just a gap left. Or, make a template out of cardboard, add your fabric and stitch all the way around, not too big. Pull the ends tight, tie off, and iron it.
